The End… Of Summer That Is.
Seems like it was just yesterday that I was talking about how summer was here with a vengeance. However, here we are, a few weeks later, and it’s starting to feel like – dare I say – fall. I’m sure I’m going jinx us or something. Seriously, I’m starting to feel a crisp in the air, are you? Okay… so maybe “crisp” is a little of a reach, but it’s definitely starting to feel a little less hot and a lot less humid. I do believe my hair is finally returning to “average” size.
I’m sure part of the reason that summer seems to have slipped by was the fact that most of us were stuck indoors, glued to the TV for 2 of the last 3 weeks. I moved to Houston a year ago last month. My first year here it barely rained during “hurricane season”. This year, “hurricane season” let me know what it was all about.
My Houston hurricane experience seems oddly familiar. It seems to drum up some memories of my first two winters in DC. The first year winter was calm and beautiful. I learned to layer and laughed when my dad asked me if I had bought my ice scrapper. He warned me “It gets cold there, just wait.” A year later, I was using a credit card to scrape just enough ice off my windshield so I could see to drive to work. I still have that ice scraper in my trunk… I should have known hurricane season wouldn’t be any different. ?
Harvey took a lot out of all of us, emotionally, physically, and mentally. When I finally was able to leave my apartment and go to the store, it was such an odd feeling. There were people out and about, but the grocery store looked like something out of Jumanji. They were basically out of everything, including eggs?, making it very difficult for me to make my birthday cake?, but what they did have was an endless supply of peaches?. Of course, this reminded me, I still owe y’all a recipe for my perfect peach crumble for you and your peach – and by that I mean Peach Crumble for Two.

Since it’s just Tyler and me, I’m always trying to figure out how to take a dessert for 4 to 6 people and make it for 1 or 2. One of my first dessert recipes I shared was Brown Butter Vanilla Cupcakes for Two. Grant it, there are times when I make that recipe, and there’s only one person home… just being honest. #sorrynotsorry It’s kind of my goal in life to figure out how to make all our favorite desserts in single serve portions. For some reason, when you use the little bowl to mix something, you feel a lot less guilty.
Enter, the single serving peach crumble. This recipe really came from desperation and a lack of eggs, but hey, I’ll take inspiration and a great new recipe wherever I can get it! I’m thinking there will be a fall version follow up to this one with some pears or apples and possibly a caramel drizzle. What do you think?

Perfect Peach Crumble for Two
You can evolve this recipe to work with any kind of fruit you have on hand. Also, the ingredients are easily doubled to make 1 small baking dish worth of crumble.
Step 1: Prep the fruit
Slice the fruit and toss with granulated sugar (if your peaches aren’t quite sweet, add a bit more sugar), flour, a dash of cinnamon, and salt.
Step 2: Make the crumble topping
Start by mixing the softened butter (reserve 1 tablespoon to butter the dish and add to the peaches) and brown sugar. To that, add the dash of milk, and then the flour with a pinch of salt. It should start to have a paste texture. Fold in the oatmeal, and set aside.
Step 3: Assemble and bake
Use your reserved butter, and butter your baking dish. Add the peaches, and take the remainder of the butter and dollop the peaches. Add the crumble topping and bake until the topping is golden and the juices are bubbly.
Step 4: Enjoy!
Remove the crumble from the oven, let it sit for about 10 to 15 minutes, then dig in!
- 1 tablespoon brown sugar
- 2 1/2 tablespoon butter (reserve 1/2 tablespoon to butter the dish and 1/2 tablespoon to dollop peaches)
- 1-2 teaspoons milk
- 3 tablespoons flour (reserve 1 tablespoon for the peaches)
- 2 tablespoons oats
- 1 peach
- 1 teaspoon cinnamon
- 1 teaspoon granulated sugar
- 2 pinches of salt (1 for crumble, 1 for peaches)
- Mix together peach slices, granulated sugar, a pinch of salt, 1 tablespoon flour, and a dash of cinnamon.
- Make the crumble my combining the brown sugar, 1 1/2 tablespoon butter, and milk.
- To the brown sugar, add the flour and a pinch of salt.
- Add 2 tablespoons of oats.
- Set the crumble mixture aside.
- Butter your baking dish and add the peaches.
- Dollop the peaches with bits of butter.
- Add the crumble topping.
- Bake for 20 to 25 minutes at 350 degrees or until the top is golden and the juices are bubbly.
- Let cool for 10 to 15 minutes and enjoy!
